Greta Clausen, Director of Service
Job description:
Coordinate exemplary service of the employees, both in the dining room and in the kitchen to maximize the guest’s experience.
Favorite aspect of job: The excitement! Every dinner service is constantly changing and moving.
Background: I started serving in this industry fourteen years ago. Though it started as a part-time profession while I was in college, it eventually became a full-time focus, something I really love. I have a BA in Political Science from Humboldt State University and a BS in Culinary Management as well as an AA in Professional Cooking and Baking from BIC.
Hobbies: I love cheese! So much so that I’m co-writing a book for the average Joe.
Personal trivia:
I love to run and swim, and just recently completed my first full marathon (26.2 miles).
Favorite Charleston menu item: Well, that depends on the day since our menu changes daily. Currently, my favorite item is Veal with Potato Risotto, Caramelized Oyster Mushrooms and Vermouth Sauce. It’s got everything I could ask for in one bite.
Favorite wine on the Charleston wine list: Almost any…and I do mean any. I really favor Rhone wine (both red and white). I believe the region reaches out to many foods and cheeses.
What’s special about the Charleston experience?
I love working with incredible people and incredible product. I’m proud to work here and call these people my friends.
